The Biancolilla and Moresca olives used for Val di Noto are grown in Castelluccio, in the Noto Valley of Sicily, using organic farming practices and without pesticides.
While the oil is not yet officially certified organic (certification currently in progress), the cultivation methods already follow organic agricultural protocols.
We also prioritize sustainability at every step: local artisanal production, maritime shipping to Canada to reduce our carbon footprint, and recyclable packaging.
Our oil comes from a blend of the native Biancolilla and Moresca varieties, grown and harvested in Castelluccio in the Noto Valley.
The olives are pressed together shortly after harvest to create a single blend that reflects the local terroir.
The oil is not blended with other origins or other harvest years, and it is unfiltered. This traceability and freshness allow it to stand out as a premium extra virgin olive oil on the Canadian market — literally among the freshest available — while preserving its aromatic richness, polyphenols, vitamins, and antioxidants.
